In the GUI under "Server Management", click "Email". Then, choose "Advanced", and
enter the domain you want to use under "Force Sender Domain". I just did the same 
thing with mine. It might be a problem, however, if you have more than one virtual 
site on the box with users sending mail--this looks like a server-wide setting.
