The server is likely fine, but it sounds like you got some bad advice 
from the previous admin.

What you need to do is in Site Management > [DOMAIN] > Services > Email, 
make sure that you have JUST THE DOMAIN in the "Email Server Aliases" 
box.   In other words, if your site is www.domain.com, put domain.com in 
the Email Server Aliases.   Then click Save.

That should work every time.
