Michael,

thank you for the hint. rsyslog was the service I did not restart (dovecot and sendmail was restarted)
Now the time in the maillog is correct.
Maybe you can trigger a restart of the services if timezone in the GUI is changing.

The timezone was changed and some services are still running from before
the timezone had changed. So they operate on the TZ data from a
different timezone. Simple fix: Restart the services:

systemctl restart rsyslog
systemctl restart dovecot
systemctl restart sendmail
