Here is a little script that Michael wrote for me to solve this issue - it starts things in the correct order:

#!/bin/bash

/sbin/service sendmail stop
killall -9 sendmail
/sbin/service clamav restart
/sbin/service clamav-milter restart
/sbin/service spamassassin restart
/sbin/service spamass-milter restart
/sbin/service milter-geoip restart
/sbin/service milter-greylist restart
/sbin/service sendmail restart

Michael will be releasing an update to the inbuilt scripts in due course.

Works 100% of the time! :)
