Why not just manually move some of the big files - so the backup stays under 1Gb? The backup will work then, and you can manually move the big files into the directory they were in on the development server/area.

I have checked the limit.conf and nothing in there, no php timeouts, php
memory limits are fine, and no other other issues, it just
stops as soon as it reaches 1Gb in size
