[BlueOnyx:05375] Email - Remove Squirrelmail Install another?

I have been having difficulties with Squirrel Mail since installation of the BO OS.  Everything seems to be working properly, including YUM updates, but my outgoing mail ALL lists the hosting site on the return mail.

Now, I think I just want to remove Squirrel Mail and replace it with something else.  Is there documentation to support such a move?  If so, where might I look?

Second, are there recommendations for an alternative mail system?
