Hi Mike

Thanks for the thought... it's been rebooted (twice) and it's definately 
httpd causing the problem.  The start of the issues perfectly match the 
update at 6am last Friday morning.

I've set up a cron job to run /etc/rc.d/init.d/httpd restart every 15 
minuts - I hope it'll help hold it together.
