[BlueOnyx:12570] Outgoing email server name

OK, as many of us do, I have many sites on my BlueOnyx boxes. My question is
how can I change the outgoing server that is show in Sendmail communication
and logs. It appears to use a domain name on the box from random selection
and I would like to make it something else.
