If this is a 5209R go to "Server Management" / "Security / "PHP
Settings" first. Under "PHP versions available for virtual sites" make
sure the desired PHP from the package is on the lefthand side. If it's
not (after a first time install of the PKG it isn't) move it to the left
and save the changes.

Then go to the Vsite in question and under "Services" / "Web" you will
be able to select the PHP version. Provided you the ticker for "Enable
PHP scripting" is set to either suPHP *or* FPM. Because only those two
allow us to to individually set a specific PHP version for a single Vsite.

Like on older BlueOnyx versions you can also choose to switch the whole
Apache to the new PHP from the PKG as a default. That's done under
"Server Management" / "Security / "PHP Settings". In which case the new
PHP from the Package would then be used for "PHP (DSO)" and "PHP (DSO) +
mod_ruid2" as well.
