Yes in deed it is running and enabled

That is indeed quite unusual. Please check if you have the service "NetworkManager" running. It *should* be running on a 5210R and it will keep the network settings applied.

You can check it this way:

[root at 5210r 5210R]# systemctl status NetworkManager ● NetworkManager.service - Network Manager
    Loaded: loaded (/usr/lib/systemd/system/NetworkManager.service;
enabled; vendor preset: enabled)
    Active: active (running) since Tue 2021-12-21 23:19:47 -05; 1 months

It should say "Active: active (running)" and also above it should mention "enabled".

Older versions of BlueOnyx had NetworkManager disabled, but since it became an integral part of EL8's network configuration all the GUI's network scripts now make use of it to apply the configuration. If NetworkManager is disabled on a 5210R, then you might see the effects you're now experiencing: Loss of network connectivity after a reboot.
