Found it and fixed it. In virtual domains there were a load of mappings to the previous server name. This worked with sendmail (no idea why) but not with postfix.
Removed the @domain and everything is hunky dory.

almost victorious! Outgoing works as it should.... but incoming mail is still a no-no.
