Ok I went into my test machine
Everything I had checked vanished this morning
I rechecked everything under the Email settings (SMTPS, IMAPS, etc) and also POP authenticated relaying

I then rebooted and logged back in
Under Network Services -> Email all the settings I had checked before the reboot had reverted back to unchecked. None of the services were running until I rechecked everything.
All those settings reverted back to the defaults, poprelayd was not running (in fact chkconfig showed what used to be on was not off randomly). I rechecked POP authenticated relaying, verified poprelayd was running and that a chkconfig -list showed that it was "on" for the appropriate run levels.
Rebooted.
And back to the settings being gone again.
I noticed in the logs right after reboot:

So the settings are getting reset to default on some startup script.
Any ideas on how to resolve this?

I check the boxes next to pop relay, SMTPS Server, IMAPS, submission port etc etc
They eventually go away and I have to recheck them. Seems to disappear after a reboot and a cmuImport (at least I noticed this morning after I started importing some sites)
Is this a known issue?
Cced is setting it:
