If you use a third party application to backup the VPS's, then backup 
/vz/private/ and /etc/vz/conf/

The first directory contains the VPS file areas and the 2nd directory the 
config files of the VPS. That's all you need for a restore.

In case of desaster recovery: Reinstall from the ISO, copy back /etc/vz/conf 
and /vz/private, restart openvz, restart cced and you're done.
