WELL guys. It works. But why ?
I re-created all the account... And it works ! I'm not sure to know 
why... The modified DNS was not totally propagated, maybe ? The old user 
accounts was bad ? Don't know... But it works now.

For the last error, your were right : postmaster was not the good 
example, on other users, the sendmail -bv just returned the "excessive 
recursion". Postmaster was an exception.
Now on the re-creates users, sendmail -bv tells "local user", and no 
more error.
