Actually I have an old Sony Trinitron 19" in my server room and could install 
and boot into 5107R just fine with that.

When you boot off the ISO, you can append a "resolution=1024x768" to the boot 
string instead of hitting return.

Type in the following as boot option and see if that helps:

linux ks=cdrom:/ks/kickstart.cfg initrd=initrd.img resolution=1024x768
