Nic,

no this is not possible.
Blueonyx based on CentOS Linux or Scientific Linux; both Linux Systems.

Microsoft Exchange Server can only run on an Microsoft Operating System (like Server 2008 R2, 2012 or Small Business Server).

If you do not want to run Windows Server, maybe you can have a look for Open Exchange (http://www.open-xchange.com/home.html). It might be that it is possible to get it working on BlueOnyx but I would not recommend this because it will not be integrated in the BlueOnyx panel.
