Unfortunately, given that the IMAP implementation does not support 
subfolders, you're going to have a tough time with that.  You can see 
this link from Dovecot.org:

BlueOnyx uses mbox.  Now based on my reading, it may be possible to 
implement Maildir++, and if Maildir++ will add the ability to do 
subfolders with any IMAP client (including Roundcube) then I would be a 
fan of that.
