that sounds interesting because we are also running several BO on vmware and will probably run into the not enough space problem.
How can I add an additional virtual disk to /dev/mapper/VolGroup00-home to increase space for /dev/mapper/VolGroup00-home?

I'd recommend not increasing the existing disks size but instead adding a second virtual one to the VM and then just add it to the LVM volume group and then grow the volume - both are doable while the system is online.
Growing the main disk may certainly be possible too, but you need to boot from an emergency CD/system and first grow the partition and then the filesystem and there is some room for great havoc to happen with that while the approach with a new disk is pretty fail-safe.
