Is there any chance in future we can have an option on the GUI to make a 
client web only, email only, or web and email. Can't believe that we are the 
only other business with web clients with off server email, and with email 
only clients that would find this feature useful.

make sure the MX records are setup to access gmail

It actually does work perfectly as it is.

First, in the GUI, don't click to disable email (that is designed to make 
the email bounce).
Second, If you remove the email server aliases in the GUI, then the MX 
records will always deliver to whatever other server they are directed to.
Permenent and easy.
