IOS is pretty strict about self-signed certs and what you'll probably 
need to do is wind up configuring your own CA to sign against and then 
import that into each IOS device.

Understanding you don't want to use LetsEncrypt because of the http 
verification that would be difficult to set up through your firewall, 
another option you may want to consider is getting a commercial 
certificate.   It'll cost you a couple bucks, but if you're like me that 
may well be worth it.   I wouldn't spend a bunch of time fiddling with 
something that I could buy my way out of for what amounts to less than 
30 minutes of my labor cost.
