You might look for clues in /var/log/mysqld.log and /var/log/messages, 
especially if you know about when the service is failing.

You mentioned that you have enough disk space, and I'm guessing you did 
df -h to see that.  Another thing to check is if you have plenty of 
available inodes in /var:
# df -i

Past that, perhaps check that your databases are not corrupted.

Those are my thoughts to rule out something simple.
