Stephan,
I believe you can edit the /etc/dovecot/conf.d/10-auth.conf and
change the:
#auth_username_format = %Lu to read
auth_username_format = %n
Make sure you remove the comment (#) character from the
beginning. Then restart dovecot and it will remove the domain
from the email address given for authentication.
